Halloween is my favorite holiday. Period. I admit I take it very seriously but I also have a lot of fun with it. The weeks leading up to Halloween are the most hectic for me as I’m working on my costume, creating trick-or-treat goody bags (kids who stop by my boyfriend’s house on Halloween get loaded treat bags with toys and handfuls of candy), carving pumpkins (yes, plural) and decorating like a madwoman. The one thing I don’t have time for is creating spooky treats in the kitchen. Hey, I work full-time and pull off stellar Halloweens. I have to let something go, right?
But this year, as a special treat for all you loyal blog readers, I’ve rolled up my sleeves, dug into the back of my cabinet (yes, the one I’m supposed to be cleaning up) and found my brain Jell-O mold. This was one of those box-back mail-in premiums I stumbled across years ago. My Mom was the queen of scoring these type of deals. I had a Campbell’s kid watch, Fat Albert Jell-O pudding bowls, Chiquita Banana dolls and record (I can still sing the whole song!) and lord knows what else. I don’t seem to have the same knack for finding these offers but I do think a brain-shaped Jell-O mold is a pretty rare find. Correct me if I’m wrong.
This mold begged for a more opaque Jell-O. I combined Sugar-Free Black Cherry Jell-O with 80z Lite Cool Whip (great instructions here ). I’d planned to embellish with gummy worms, bone candy, or some other spooky snack but, like I said, its been crazy! And besides, isn’t a layered brain Jell-O salad spooky enough on it’s own?
Now back to costume prep. After last year’s award-winning Mary Poppins costume, I have a lot to live up to. Happy Halloween!
