Can you ever have too many quick recipes at your fingertips for weeknight dinners? We thought not. Here’s a simple one loaded with bright flavors that comes together in about half an hour. If you have the time, you can make the slaw the night before to really let the flavors develop. If not, don’t worry. The tangy, earthy saltiness from fish and soy sauces teamed up with fresh cilantro and mint create a nice contrast with simply fried cod (or whatever white fish you’d like to use). For the slaw, feel free to use a few types of cabbage, or just one. Mix in some julienned carrots, fennel, apple or jicama — or not. Play with the ingredients a bit now and then, and you’ll have endless options to add to your dinner rotation. Read on for the recipe.
