One of the most well-known Food Network stars and best-selling cookbook author Giada De Laurentiis is back with a great new book just in time for the holidays. (Psst! It’s also a great gift for the holidays!) Happy Cooking is packed with 200 new recipes and helpful advice on everything from hosting dinners to making picnic lunches. I find her recipes simple, easy to follow and always delicious. But what I really love about Happy Cooking is the variety of recipes. It’s so easy to plan a full meal (appetizers to desserts) from this one book. As a reader, I was inspired to try new ingredients and develop healthier eating practices by packing meals with nutrients.
When the final copy of Happy Cooking landed on my desk, I first opened to page 52 and saw the most delicious wings EVER! Since my Seahawks were playing that coming Sunday, I thought it was a smart idea to invite some friends over and cook some wings! I made Giada’s Mediterranean Chile Chicken Wings—and those babies sure had a kick to them. Harissa, which is a North African chile paste, added the perfect kick to these wings. But I also wanted to make something sweet for my friends who aren’t fans of spicy food. The Asian Sesame Chicken Wings have a nice balance of ginger and citrus and were also a huge hit!
I decided to end the night with the Superfood Fudge Torte. Don’t be scared of the word superfood. This torte is still packed with loads of chocolate, but get this: spinach is in the torte, too! The first step to this recipe is making a blueberry and spinach purée. After you set that aside, you melt your butter and chocolate and let that cool. Then in a separate bowl, you whisk your eggs, vanilla, agave and purée. Once that’s mixed you add in the cooled chocolate mixture. You’ll mix this with brown rice flour, flax meal, cocoa powder, oats and salt. Pour into a pie plate and start baking. Once done and cooled completely you can top the torte with a dollop of a spiced yogurt topping, which is simply Greek yogurt, cinnamon and maple syrup. So, so good!
