It’s #StaubSunday again (how the week flies when you’re looking forward to something), and that means it’s time to get out your favorite Staub pieces and try out the interesting twists on fall cooking that Chef Joel has been dreaming up for us. This week he has used the Staub steam grill to prepare a Grilled Pizza with Pear, Caramelized Onions, and Gorgonzola. Easy and delicious!
Grilled Pizza with Pear, Caramelized Onions, and Gorgonzola
Yield: 8 individual (5-inch) pizzas
2 tablespoons extra-virgin olive oil, plus more for brushing
2 large onions, thinly sliced
1 small garlic cloves, finely minced
Kosher salt and freshly ground black pepper
2 ripe pears, peeled, cored and cut into 1/4-inch slices
2 tablespoons lemon juice
1 recipe Homemade Pizza Dough
Corn meal or flour, as needed
1-1/2 cups soft gorgonzola cheese, crumbled
Preheat a gas grill to high, or heat a large grill pan over high heat. Brush grill grates or grill pan with a thin coating of vegetable oil using a silicone pastry brush.
To prepare onions: Place a large, nonstick skillet on the stove over a medium-low heat and add oil. When the oil is just starting to shimmer, add the onions and cook until tender and golden in color, about 15 minutes. Add the garlic and cook until tender, about 1 to 2 minutes. Taste and adjust seasoning with salt and pepper.
To prepare pears: Place the pears sliced into a medium bowl and toss with lemon juice. Set aside.
To cook pizzas: Lightly flour a rimless baking sheet or pizza peel. Place dough rounds one at a time on the baking sheet and carefully transfer to grill grates. Cover, and cook until grill marks appear, about 2 to 3 minutes. Open grill and transfer dough rounds to another rimless baking sheet or large cutting board. Repeat with remaining dough rounds.
Flip each dough round so grill marks face up. Quickly brush each grilled side lightly with olive oil and spread each round with carmelized onions, pears and gorgonzola crumbles.. Return topped dough rounds to grill, cover, and grill until cheese melts and second side is cooked, about 3 to 4 minutes.
To serve: Remove the pizza from the oven and place on a cutting board. Let the pizza rest for 1 to 2 minutes before you cut it, you will get prettier pieces. Season with salt and pepper, and serve.
