This recipe for easy, chocolate-covered salted caramels comes via our Cooking Class program. Here’s a pro tip from our Test Kitchen chefs: Pour the caramel mixture into silicone ice cube trays for perfect square treats that pop out easily. Also, when you’re cooking the caramel, it’s really important to be accurate with the final temperature, so use a candy thermometer. At 240ºF the caramel will be soft and flowing, at 250ºF it will be jaw-breaker toffee. Aim for 245ºF so that it sets but stays chewy.
